Let the "Tomato Bowl" games begin

I often get spam and occasionally emails from solicitors or companies regarding some of my blog posts.  Usually, I delete them.  But recently I received an email from Red Gold / Red Pack tomatoes inviting me to participate in a competition around the The Big Game on Sunday and after some conversations with their PR representative, I thought it would be fun.  I will be among several bloggers participating in the Tomato Bowl - an online cook-off.  Since the Steelers are headed to the big game next weekend - and I am obviously a Steeler fan - I will represent the Pittsburgh Steeler market (along with 5 other Pittsburgh bloggers) and this week my blog posts will feature dishes that I've made with Red Gold products.  I can post as many times as I want between Monday, January 31 and the game.  The more the better, so that we can beat the Green Bay market bloggers.  Unfortunately, I won't get paid for doing this (and no, I'm not selling out to advertising just yet), but I will win a Red Gold tomato package if our market wins.  And free canned goods are almost as good as cash, right?

So I need your help - please share any recipe ideas with me that you think would be tasty with which I could use a Red Gold product (diced tomatoes, canned tomatoes, tomato sauce, etc.) 

And tomorrow, let the games begin.  Oh, and, go Steelers!

  1. Here's one of our go-to family recipes that wins over my family and any guests that may join our table! Could not be easier, and calls for diced tomatoes to boot! Did I mention that it freezes well in case you want to put up a second batch for later?

    Penne A La Vodka

    1 T Butter
    1 T Olive Oil
    1 med. Yellow onion chopped
    1 28 oz can diced tomatoes
    1 C Whipping Cream
    ¼ C Vodka
    ¼ t crushed red peppers
    1 lb cooked penne
    Fresh grated parmesan cheese & chives

    Sauté onion in butter and olive oil
    Add tomatoes until juice is reduced by 1/5
    Add cream, vodka, and peppers – simmer until thickened
    Season with salt and pepper
